
In my quest to eat healthier, I am going to try and make one meal with fish each week. I do use shrimp a lot, but I want to try and get some Omega-3's into our diet. This recipe was something I just threw together based on other marinades and it was great. When I eat swordfish or salmon, I prefer light flavors like lemon or even just salt and pepper. If the fish is good, the natural flavor is enough for me. The kids were not sure about this one, but they are also going through a phase where one day they love something and then next they 'hate' it. So I will most likely ignore their comments and make this again!
Marinated Swordfish
Ingredients:
* 4 4oz swordfish steaks (I used frozen ones from Trader Joe's and they were excellent)
* 1/4 cup lemon juice
* 2T Dijon mustard
* 2 cloves of garlic, crushed
* 2T olive oil
* salt and pepper to taste
Preparation:
* Mix the ingredients together and pour over swordfish, cover and refrigerate overnight
* Keep a little marinade off to the side for basting.
* Grill swordfish while basting with reserved marinade, flip over and grill
I can't give you the actual time that I grilled the swordfish because I did not pay attention. Plus, I am one of those weird people who likes my fish on the well done side almost to the point of being overcooked!
I served this with a fingerling potato medley (I love the purple ones) that I roasted with olive oil, salt, pepper and garlic, and some frozen broccoli because I was in a hurry! Still good though!
